Fragrant Salmon

Preparation of the Salmon

1 – Oil a baking dish. Place the salmon filets methodically. Season with salt and pepper to taste, pour in olive oil, powder with rosemary and add lemon juice.

2 – Cover the dish and bake it at 200°C, during 15 to 20 minutes. If the filets are relatively thick, they may need more baking time.

Suggestion

If you can not obtain filets of salmon, you may use pieces of salmon, calculating approximately 250g per serving. This recipe can be done on the grill, instead of the oven. Note that the salmon will be cooked when it becomes a pale pink color. It does not need to be well done, because it dries and loses its flavor. Similar to red meat, the fish are perfectly done when they start to release their natural juices, activated by the heat.
You may also serve this dish cold, accompanied with a tomato, onion and olive salad.

Preparation of the Sauce

1 – Add all the ingredients into the processor for a couple minutes.

2 – Remove and taste to check if it is missing flavoring. You may also add a pounded garlic glove to the ingredients.

Suggestion

This is a suitable sauce for fish and red meats. It is ideal for altering the taste of a barbeque and it can be preserved in the refrigerator for a week.

Ingredients (makes 4 servings)

- 900g to 1kg pink salmon filets
- Pinch of rosemary
- 3 tablespoons olive oil
- Salt and pepper
- Juice from ½ squeezed lemon

Ingredients for the sauce

- Handful of watercress
- 3 tablespoons parsley
- Pinch of oregano
- 1 teaspoon diced onion
- 1 teaspoon coriander
- ½ tablespoon capers
- 1 tablespoon bread crumbs soaked in vinegar, then pressed
- 1 squeezed lemon
- Salt and pepper
- 4 to 5 tablespoons olive oil
- 1 tablespoon sugar
- 2 anchovie
